(1) The importance of making tradition foods into non traditional fillings that it’s a big impact because you’re used to the way they make it in your  cultural. Another thing is that basically the way you were taught making the food is the way you’re be doing it for the rest of your life. (2) It’s important to target your customers cultural tastes when you’re creating a menu because they will be familiar with the food and they are going to have high expectations to see if it tastes good just like in their cultural. Some students were fine with the filling because they were open-minded on  trying the fillings and the other half refuse because they knew right away it wasn’t going to taste the same. I think target markets are based on everything like trying new things and the other half it’s simply the age target there trying to get.

The problem with the masa was that it was easier to make but freezing the masa was a problem that we struggled a lot with. When we were making the tortillas they would cook but when you tried to make the small rounded balls they wouldn’t make. After my group was done making the tortillas I tasted them and they weren’t that bad they were actually pretty good. (3) A new master skill that you can easily learn is by using the tortilla machine that will help you master it, after you have created small  masa balls.

The pictures that I took they came out pretty good and just by seeing this picture it makes me want to get some tacos. The plating that my design that was for the tacos which  the ingredients stand out  that my group and I used to create them. (4) What I liked about them was the meat it was super delicious and the ingredients that it had. I did a few design plates of tacos that I really liked. (5) I can see my myself working at a restaurant or in a kitchen helping out making the food .

Ingredients 

  • 3/4 c heavy cream
  • 1 1/2 c dark chocolate chips 
  • 1 tsp powdered sugar 
  • 1 c freeze-dried strawberries 

Coating 

  • 1 c freeze-dried strawberries
  • 2 tsp powdered sugar 

Instructions

Step 1 

  • First, take the 1 c freeze-dried strawberries in a food processor. Then after you’re down with it put it aside. Also, take 2 tsp powdered sugar set it aside. 

Step 2 

  • In a small saucepan, heat the heavy cream until its steaming on medium-low heat, Don’t Boil. Next, pour the hot cream over the chocolates, but first, wait 1 min. Whisk cream and chocolate chips together until its completely smooth. Then stir in freeze-dried strawberries powder until they combined. 

Step 3

  • Next, chill the chocolate mixture for about 1-2 hours in the refrigerator until your able to scoop it.  

Step 4 

  • Take the freeze-dried strawberry and the 2 tsp powdered sugar that you set aside mix together. 

Step 5 

  • Use a cookie scoop to scoop out small amounts of the firm chocolate. Roll them up into balls, then toss them in the powdered strawberry mixture. Repeat this process until you have all the truffles ready. 

Step 6 

  • Final step put the truffles in the refrigerator until they are ready to serve! 

Reflection

When I was making the truffles with my team we did a pretty good job. We work well together and we got this recipe done. These truffles are super easy to make and you can make for any event that you have. The final product which was the truffles came out delicious that I would recommend it to anyone.

Oxnard High School Health Fair

 

On February 21, 2019 the Culinary Arts program hosted this Healthy Fair that  took place at Oxnard High School. This fair took place to show the benefits of staying physical and emotionally healthy for your well being. The students in the culinary program each created a booth that they would share that day with the rest of the other students that attend OHS.

My group and I came up with a booth that involved your emotional being. The booth that we presented has using art that can be a method that helps you relax and just forget about everything in that moment. The title that  we presented was Art 2 Soul.  What we were trying to sell was art  that could help you relax. Our costumers which were students would come over to our booth and sit down and paint what ever inspired them.  There reaction to the booth was relaxing. One student after she was done painting said ” Wow that was relaxing”. Which in this cause was being really successful that more people started to come over to our booth. The message that we would sell is that art is a creative way to help you deal with any type of mental illness that you’re struggling with. The products that we will sell are paint brushes, paints, chalk, paper and also play dough of course.

The day the event took place it was a sunny beautiful morning where students from OHS would look  that the different stations that were at the fair. Each student  would go around take try the activities or food that the stations were offering. The event was super successful all the students were participating in all activities that took place.

Here you will see one of the recipes that you can make at home which is a simply recipe. You can make anywhere for cocktails parties etc… Hopefully you enjoy making this recipe just as like I did.

 

 Bruschetta Recipe

Ingredients: 

2 Lb of fresh tomatoes

1/2 of fresh onion

4 cloves of fresh garlic

1 handfull of fresh basil

4 tsp. of extra virgin olive oil

sea salt and fresh ground pepper

Italian bread or baguette

Steps:

  1. Have all your ingredients ready
  2. Dice tomatoes
  3. Chop all the onion
  4. Next chop the garlic
  5. Add the fresh Basil
  6. Then, add the olive oil, salt and pepper
  7. Toast the bread
  8. Lastly the bruschetta is ready to serve and ready to enjoy!!

Reflection:

I really enjoyed making this recipe. This recipe was really easy to make and i think you can do this recipe anywhere. Then when making this recipe my team members also help me with this recipe which we all communicated well together. Which in the end it help us make this wondering recipe.

Garden Tamale Luncheon

At this event, Oxnard High School students are making tamales to realize the importance of healthy food for you and the planet. The Culinary Arts Program students will be showing their skills in marketing and culinary.  The whole preparation will have decorating, marketing, planning, and garden lunch serving skills. This event was inspired by Florencia Ramirez where she came into the class giving them a presentation about this event. After the whole preparation, the students head into the kitchen to prepare the process of these healthy tamales.

When the students got into the kitchen the process began. Before they began the tamales Mrs. Ramirez gave them a demonstration of how the tamales should be made. After showing every single step the students got to work. Each of them got into groups which included 4 people. There were different type of stations that with there group they can decide where they want to work. The different type of station was making the masa, putting the masa to the tamales, putting the leaves in water, and putting in the filling into it.

Finally, on December 19, 2018, the students invite special guests which include staff, teachers, principals, and counselors. You can’t forget the most importantly the board of trustee members and of course the district administrator. The hours that this event took was from  11:30 am all the way through 1:30 pm. The location that the event took place was at OHS cafe where the state and million dollars culinary classroom is located. This event was wonderful staff came in heard speeches of the importance of healthy tamale. Which then lead them to eat delicious tamales.
